Position Title:Chef de Partie
Employment:Full Time – hours varied
Department:Hospitality, Kitchen
Reports to:Head Chef / Sous Chef / Junior Sous Chef
We're looking for an experiencedChef de Partieto join our kitchen team at The Lane Vineyard.
Working alongside our Head Chef and Sous Chefs, you'll take ownership of your section and play an important role in delivering consistently high-quality food across our restaurant, tasting room, experiences and events.

Position Overview
The Chef de Partie is responsible for managing a designated section of the kitchen with confidence, consistency and pride.
This role is essential in maintaining the high standards expected at The Lane Vineyard across all areas of the business, from our restaurant and tasting room to private experiences and events.
You'll be responsible for ensuring your section is organised, well prepared and service-ready, delivering every dish with precision while supporting a positive, collaborative kitchen culture.
Key Responsibilities
1. Section Ownership
Manage daily prep, service, and cleanliness for your assigned section.
Maintain mise en place to required levels, ensuring readiness for every service.
Ensure all recipes, plating guides, and portion sizes are followed precisely.
Communicate prep needs, shortages, and quality issues promptly to senior chefs.
Maintain accurate section ordering in line with par levels and wastage targets.
2. Service Excellence
Deliver consistent quality and timing during service across all kitchen outlets.
Work efficiently and calmly under pressure,



supporting the flow of service.
Ensure presentation, seasoning, and temperature standards meet The Lane's expectations.
Collaborate with FOH and pass chefs to ensure accurate communication and service flow.
3. Standards & Compliance
Uphold hygiene, safety, and cleanliness standards at all times.
Complete daily cleaning checklists, temperature logs, and storage records.
Support compliance with WHS and food safety requirements.
Follow stock rotation systems (FIFO) and report any spoilage or waste.
4. Teamwork & Development
Support Commis and Apprentice Chefs in learning and section tasks.
Communicate respectfully with all team members, offering guidance when needed.
Participate actively in briefings, training sessions, and team meetings.
Maintain a professional, positive attitude that contributes to kitchen culture.

About You
You're someone who enjoys being organised, works well under pressure and takes pride in consistently producing quality food.
You understand the importance of preparation, communication and teamwork, and you're always willing to roll your sleeves up and support the wider kitchen when needed.
Ideally, you'll bring:
Previous experience as a Chef de Partie, or you're an experienced Demi Chef ready for the next step.
Strong organisational skills and excellent attention to detail.
The ability to remain calm, focused and efficient during busy services.
A positive attitude with a genuine team-first mindset.
A passion for quality produce and delivering consistently high standards.
Sound knowledge of food safety, hygiene and kitchen operations.
Flexibility to work weekends and occasional evenings for weddings and special events.
