Job Description
Nosso Cafe The Chef is responsible for planning, organising and directing the preparation and cooking of authentic Brazilian cuisine and contemporary café-style meals. The role ensures high standards of food quality, presentation, food safety and kitchen efficiency while coordinating daily kitchen operations, contributing to menu development and supervising kitchen staff to deliver a consistent and high-quality dining experience.
Benefits Salary: AU$75,000–AU$85,000 + superannuation. Task & responsibilities Plan, organise, prepare and cook a wide range of authentic Brazilian dishes, breakfast and brunch meals, café-style menu items, desserts and seasonal specials in accordance with established recipes and quality standards. Plan, develop and update menus, seasonal specials and recipes that reflect authentic Brazilian cuisine while meeting customer expectations and business objectives.
Monitor all stages of food preparation and cooking to ensure consistency in quality, flavour, portion control and presentation. Determine food preparation requirements and coordinate daily kitchen operations to ensure efficient workflow and timely service during peak trading periods. Estimate food and labour costs and assist with ordering, receiving and controlling food supplies and kitchen inventory to minimise waste and maintain profitability.
Inspect the quality, freshness and storage of ingredients, ensuring appropriate stock rotation and inventory control procedures are maintained. Demonstrate cooking techniques and provide guidance to kitchen staff to ensure consistency in food preparation, presentation,



quality standards and safe work practices. Supervise and coordinate kitchen staff during food preparation and service, allocating duties to maximise productivity and maintain efficient kitchen operations.
Prepare and present meals in accordance with established recipes, portion sizes and presentation standards, ensuring customer satisfaction and consistency. Ensure compliance with Food Standards Australia New Zealand (FSANZ), food safety legislation, HACCP principles, workplace health and safety requirements, and kitchen hygiene standards.
Maintain a clean, organised and safe kitchen environment, ensuring all equipment is correctly operated, cleaned and maintained. Participate in menu planning, recipe costing and continuous improvement initiatives to enhance food quality, operational efficiency and customer satisfaction. Work collaboratively with management and front-of-house staff to ensure efficient service and deliver an exceptional customer experience.
Qualification & experience Qualifications Relevant qualification at AQF Diploma, Advanced Diploma or Associate Degree level, or an equivalent overseas qualification. Alternatively, at least three years of relevant professional experience may substitute for the formal qualification, where applicable.



Experience Minimum of one year of experience working as a Chef in a commercial kitchen Experience preparing authentic Brazilian cuisine and contemporary café-style meals is highly desirable.
. Experience planning menus, coordinating kitchen operations and maintaining high standards of food quality and presentation. Experience estimating food and labour costs, controlling stock and minimising food waste. Experience supervising and coordinating kitchen staff in a fast-paced hospitality environment.
Skills Robust knowledge of commercial cookery techniques and contemporary food preparation methods. Sound understanding of menu planning, recipe development and menu costing. Strong knowledge of food cost control, inventory management and labour scheduling.
Excellent organisational, communication and time management skills. Strong attention to detail and commitment to delivering consistently high-quality meals. Ability to work effectively under pressure while maintaining food quality, presentation and service standards.
