About the role
Barcino Bread is seeking a talented and passionate
Baker
to join our team in Port Macquarie, NSW. This is a
full-time position
based at our bakery location. As a Baker, you will be at the heart of our operation, responsible for producing high-quality baked goods that our customers love. If you love making sourdough breads come join our team but if you've only had experience with yeasted breads but would like to learn something new come and learn with us.
Key responsibilities
Prepare and mix dough and batter according to established recipes and quality standards
Shape, mould and portion dough into loaves, rolls, pastries, cakes and other baked products
Operate commercial ovens and baking equipment safely and efficiently
Monitor baking times and temperatures to ensure products are cooked to perfection
Maintain cleanliness and hygiene standards throughout the bakery, including equipment sanitisation and workspace organisation
Ensure compliance with food safety regulations and best practice procedures
Conduct quality checks on finished products to meet company standards
Manage inventory of baking ingredients and materials, reporting when stock is low
Work collaboratively with other bakery team members to meet daily production targets
Assist with product decoration and presentation as required
What we're looking for
Formal qualification or apprenticeship in baking or pastry-making, or equivalent hands-on experience
Proven experience working in a commercial bakery environment
Strong understanding of baking techniques, fermentation processes and ingredient functionality
Knowledge of food safety and hygiene standards in a commercial kitchen
Ability to work early morning shifts and flexible hours as required by the bakery schedule




Physical stamina to stand for extended periods and lift heavy bags of flour and other ingredients
Attention to detail and commitment to producing consistent, high-quality products
Excellent time management and ability to work to strict production schedules
Robust teamwork and communication skills
Experience with laminated doughs, cakes, sourdough production or specialty breads is highly desirable
