The renowned Healesville Hotel in the heart of the Yarra Valley is seeking an experienced Senior or Sous Chef to manage menu preparation, coordinate kitchen operations, and ensure consistent food quality for high service volumes, as we head into the summer season. Experience with wood fired pizza is favourably viewed.

The Healesville Hotel is a historic pub in the heart of town, with a reputation for excellent food and experiences. Featuring an inviting dining room and spacious public bar and huge beer garden, the pub is a local favourite and tourist destination.

Key Responsibilities

- Prepare, cook and present a wide range of menu items in accordance with venue standards.
- Plan, develop, and cost menus, including specials and seasonal offerings.
- Monitor food quality, portion control, stock levels, and wastage.
- Maintain strict food safety, hygiene, and workplace health & safety compliance.
- Train and oversee kitchen staff in cooking techniques, food preparation, and safe kitchen practices.
- Assist with ordering,



inventory control, supplier management, and kitchen workflow.
- Ensure timely service during peak periods and coordinate with front-of-house staff.

Skills & Experience Required

- Minimum relevant AQF Certificate IV in Commercial Cookery (or overseas equivalent). At least 12 months experience as a Chef in a commercial kitchen. Strong ability to work in a fast-paced environment and handle high service volumes. Knowledge of Australian food safety standards and kitchen operations.
