Tropicana, an iconic Italian restaurant in Darlinghurst, is looking for an experienced Sous Chef to join our team as we launch an exciting new chapter following major renovations.

Working alongside the Head Chef, you'll help deliver authentic Italian cuisine, lead a passionate kitchen team, and maintain exceptional food quality and service standards.

Key Responsibilities

- Assist the Head Chef in daily kitchen operations.
- Prepare and deliver high-quality, authentic Italian dishes.
- Lead, mentor, and train junior kitchen staff.
- Maintain food safety, hygiene, and quality standards.
- Manage food costs, labour costs, rosters, and kitchen KPIs.
- Ensure consistency and efficiency during busy service periods.

Skills & Experience

- Previous experience as a Senior Sous Chef or Sous Chef in a high-volume kitchen.
- Strong knowledge of authentic Italian cuisine.
- Excellent leadership, communication,



and organisational skills.
- Hands-on approach with the ability to perform under pressure.
- Passion for mentoring staff and delivering exceptional dining experiences.
- Strong understanding of food safety and kitchen operations.

- Salary package of $80,000–$90,000 + Super.
