Chef – Full-Time

Umber Group Pty Ltd trading as 3 Sisters Indian Restaurant is seeking a qualified Chef for a full-time position at 38 Bell Street, Heidelberg Heights VIC 3081.

Key Responsibilities

- Plan, develop and review Indian-style menus in consultation with management and kitchen staff.
- Prepare and cook a range of Indian dishes, including curries, tandoori items, vegetarian and non-vegetarian entrées, biryanis, rice dishes, breads, sauces, snacks and desserts.
- Prepare marinades, curry bases, gravies, spice blends, sauces and other menu components according to established recipes.
- Examine the quality and freshness of meat, poultry, vegetables, dairy products, spices and other ingredients before use.
- Regulate cooking temperatures and apply suitable cooking methods, including grilling, roasting, frying, baking, simmering and tandoor cooking.
- Monitor the preparation, seasoning, portioning and presentation of meals to maintain consistent quality.
- Coordinate food preparation and cooking activities during busy dine-in, takeaway, delivery and function services.
- Estimate food and ingredient requirements and assist with purchasing, stock control and inventory management.
- Monitor stock rotation,



storage conditions and wastage to support productive kitchen operations.
- Maintain food-cost and portion-control standards.
- Develop seasonal specials and improve existing dishes in consultation with management.
- Train and supervise cooks and other kitchen staff in recipes, preparation methods, presentation standards and kitchen procedures.
- Allocate kitchen duties and monitor the performance of kitchen staff.
- Maintain kitchen cleanliness and ensure compliance with food-safety, hygiene, allergen-management and workplace health and safety requirements.

Requirements

- Relevant AQF Diploma or higher qualification in Commercial Cookery or a related field.
- Strong knowledge of authentic Indian cuisine, including curries, biryanis, tandoori dishes, Indian breads and spice preparation.
- Ability to plan menus and maintain consistent food quality and presentation.
- Ability to work evenings, weekends and public holidays as required.

Salary: $78,000 to $85,000 per annum plus superannuation
