Head Chef – Main Kitchen

Miami Fish Market is seeking a qualified, organised and commercially minded Head Chef to lead our growing main kitchen.

The successful candidate will lead a team of chefs and cooks, develop and produce a premium range of industry leading, restaurant-quality seafood dishes. Menus will draw inspiration from cuisines around the world, with a particular focus on European flavours and techniques. The candidate needs to be suitably qualified with training in commercial cookery, kitchen management and hospitality.

The Role

This is a hands-on Head Chef position responsible for:

- Leading the daily preparation and production of our main kitchen section
- Developing recent menu items, recipes and seasonal specials
- Producing premium seafood dishes to consistent restaurant quality standards
- Completing recipe and menu costings to ensure dishes meet quality, margin and pricing targets
- Managing ordering, stock levels, portion control and food wastage
- Planning production around retail demand, catering orders and peak periods
- Identifying opportunities to utilise seasonal and surplus ingredients profitably
- Maintaining food safety, storage, cleanliness and compliance standards
- Coordinating kitchen workflow and supervising team members
- Managing, hiring, rostering and training of staff including service staff
- Preparing food for functions, catering orders and higher-volume production
- Establishing good relationships with key suppliers to monitor best in-season produce
- Negotiating pricing with suppliers
- Working closely with management to grow the commercial performance of the division

About You

The ideal candidate will have:





- Formal qualifications in Commercial Cookery and Kitchen Management
- Diploma in Hospitality will be looked on favourably
- Experience in a fast-paced restaurant, hotel or commercial kitchen
- Experience preparing seafood and working across a varied menu
- Experience in European style cookery is advantageous
- Strong ordering, stock-control and production-planning skills
- Experience
- Knowledge of international cuisines, particularly European flavours
- Strong numerical skills and an understanding of recipe costing, food margins and cost control
- A commercial mindset and the ability to balance premium quality with profitability
- Excellent organisation, communication and time-management skills
- The confidence and ambition to take ownership of a growing kitchen

Qualifications or experience in Hospitality and kitchen management will be highly regarded.

Previous Head Chef experience is welcomed; however, we are also open to a qualified and capable chef ready to step into their first Head Chef position.

This is a full-time role and may include evening, weekend and public-holiday work.
