THE POSITION
- Planning menu, Food preparation and cooking as required
- Maintaining a high standard of food hygiene, safety, infection control and cleanliness in accordance with Compass standards
- Supervise and train other staff
- Stock take and control
- Manage the flow of Kitchen Operations
- HACCP compliance, food safety procedures and OH&S; regulations
- Oversees portion control, presentation, and consistency of quality of dishes.
THE PERSON
- Minimum Cert III and IV Commercial Cookery & Diploma of Hospitality Management
- Can be highly organised & fast paced
- Ability to work independently and as a part of a team
- Experience in function work and large volume kitchen preferable
- Basic understanding of OH&S; regulations, food safety & HACCP compliance
