ABOUT THE ROLE:

Sous Chef

An experienced Sous Chef is required to assist the Head Chef in a high volume production kitchen environment - Experience working in pastry environment advantageous.

The Job:
Responsible for the overall Kitchen operation for all corporate and external catering
Accountable to the Executive Sous Chef for the financial, operational and customer service performance of the Kitchen services program
Responsible for the coordination, production and the day-to-day operation of the Kitchen operations and special events as required
Research and develop recipes as required. Assist in creating cutting-edge menus and standard recipe cards with pictorials




Oversee the introduction & build of the pastry section
Assist in development and implement strategies to minimise COGS and introduce ways to manage and control inventories in line with company procedure
Manage the planning and operational delivery of food to all areas
Manage the control of inventory and associated costs associated with the kitchen's responsibilities
Ensure all paperwork in processed in a timely, accurate and efficient manner
Escalate issues to the Head Chef when required
Assist the Head Chef in the management of the Kitchen team to ensure a proactive and positive workplace culture

You:
Disciplined & organised Sous chef with experience in pastry
Minimum 4 years' experience working as a Sous Chef in a large scale banqueting or production kitchen operation
Robust knowledge of Food Safety and HACCP
Strong administration skills
Competency in Windows including Word, Excel, Microsoft Outlook, menu management, inventory control
