Oceane Hotel is a popular and vibrant hospitality venue in Newcastle, known for its welcoming atmosphere, quality food offering, and strong local following. With a busy bistro service, functions, and events, the hotel is seeking a dynamic and experienced Chef to join its kitchen team and contribute to consistent, high-quality dining experiences.

This role is ideal for a motivated Chef who thrives in a fast-paced hotel environment and enjoys working as part of a collaborative team.

Key Duties & Responsibilities

- Preparing, cooking, and presenting food to a high standard across daily service and functions
- Monitoring and maintaining quality, portion control, and consistency of all dishes
- Assisting with menu planning, development, and seasonal updates
- Estimating food and labour costs in consultation with senior kitchen staff and management
- Ordering, receiving, and storing food supplies, ingredients, and kitchen equipment
- Managing stock levels, minimising wastage, and maintaining cost control
- Ensuring compliance with food safety, hygiene, and WHS regulations at all times
- Assisting with the planning and execution of catering and function services
- Training, mentoring, and supervising junior chefs, cooks,



and kitchen hands
- Implementing and following kitchen systems, procedures, and standard operating practices
- Maintaining a clean, protected, and organised kitchen environment

About You
- Relevant commercial cookery qualifications
- Proven experience as a Chef in a hotel, pub, or high-volume hospitality venue
- Strong understanding of food safety standards and kitchen operations
- Ability to work well under pressure and across a rotating roster
- Team-focused attitude with good communication skills
