About the role

We are seeking an experienced Tandoori Chef to join our culinary team at Spice Affair in Casey, ACT 2913. This is a full-time position offering an exciting opportunity to showcase your expertise in tandoori cooking and traditional Indian cuisine preparation. As Tandoori Chef, you will be instrumental in maintaining the exceptional quality and authenticity of our signature tandoori dishes, whilst working collaboratively within a dynamic kitchen environment. This role is pivotal to delivering the authentic flavours and cooking techniques that define our restaurant's reputation.

Key responsibilities

1. Preparing and cooking tandoori dishes with precision and consistency, including marinated meats, seafood and vegetables

2. Operating and maintaining the tandoor oven at optimal temperatures and performing regular cleaning and safety checks

3. Preparing marinades, spice blends and other components used in tandoori cuisine following established recipes and quality standards

4. Ensuring all dishes meet our high standards for taste, presentation and portion control before service

5. Managing food preparation areas to maintain cleanliness, organisation and compliance with food safety regulations

6. Collaborating with other kitchen staff to coordinate meal preparation and ensure timely service delivery

7. Maintaining inventory of tandoori ingredients and communicating stock requirements to management

8. Contributing to menu development and suggesting new tandoori dishes that reflect current food trends and seasonal availability

Training and mentoring junior kitchen staff on tandoori cooking techniques and food safety practices

What we're looking for

1. Minimum 3–5 years of professional experience as a Tandoori Chef or in a similar specialist cooking role within an Indian restaurant or hospitality setting

2. Extensive knowledge of authentic tandoori cooking techniques, including marinating, temperature control and timing

3. Proficiency in preparing traditional Indian spice blends and marinades from scratch

4. Demonstrated expertise in operating and maintaining tandoor ovens safely and effectively

5. Strong understanding of food safety, hygiene standards and kitchen compliance requirements

6. Excellent organisational and time management skills with the ability to work efficiently during peak service periods

7. Ability to work collaboratively within a team environment whilst maintaining high standards of quality and consistency

8. Strong communication skills and a willingness to mentor and support junior kitchen staff

9. Flexibility and adaptability in a fast-paced kitchen environment

10. Preference for candidates with experience in high-volume restaurant operations or fine dining establishments
