Kamred Associates Pty Ltd T/A Gabru Grillz Ballarat is seeking experienced and passionate Chef and Cook professionals to join our busy Indian restaurant team in Ballarat, Victoria.
These are full-time positions for skilled hospitality professionals with experience in preparing authentic Indian cuisine, including traditional curries, regional Indian dishes, and commercial kitchen operations. The successful candidates will contribute to maintaining food quality, supporting kitchen operations, ensuring food safety standards, and delivering consistent dining experiences.
Chef
Key Responsibilities
- Plan, prepare, and cook authentic Indian cuisine including North Indian, South Indian, Punjabi, Mughlai, and Indo-Chinese dishes.
- Prepare a variety of curries and specialty dishes including vegetarian, chicken, lamb, goat, seafood, and paneer-based preparations.
- Develop and modify recipes, menu items, and seasonal specials while maintaining authenticity and consistency.
- Apply traditional Indian cooking techniques including spice blending, marination, tempering (tadka), slow cooking, tandoor cooking, and gravy preparation.
- Ensure food quality, taste, presentation, portion control, and consistency during service.
- Manage daily kitchen operations and coordinate preparation requirements for service periods.
- Monitor ingredient requirements, stock levels, food costs, and minimise wastage.
- Train and guide junior kitchen staff in food preparation techniques, kitchen procedures, hygiene practices, and safety requirements.
- Maintain compliance with food safety standards,
HACCP requirements, and workplace health and safety regulations.
- Work collaboratively with management and front-of-house staff regarding menu items, customer requests, dietary requirements, and service coordination.
Qualification and Experience Required
- Minimum Cert IV in Commercial Cookery (relevant or higher)
- Minimum 1 year of relevant full-time experience as a Chef, Curry Chef, or Indian Cuisine Chef.
- Strong knowledge of authentic Indian cooking methods, spices, ingredients, and regional cuisines.
- Experience preparing Indian curries, sauces, marinades, and tandoor dishes in a commercial kitchen workplace.
- Ability to manage kitchen operations and supervise junior staff.
- Strong understanding of food safety, hygiene practices, and kitchen procedures.
- Relevant culinary qualifications will be highly regarded.
Cook
Key Responsibilities
- Assist chefs with daily food preparation and cooking activities.
- Prepare ingredients including vegetables, meats, seafood, lentils, paneer, spices, sauces, and marinades.
- Cook Indian dishes including curries, rice dishes, breads, snacks, and accompaniments according to recipes and quality standards.
- Assist with curry preparation, spice preparation, sauce production, and food assembly.
- Follow recipes and cooking procedures to maintain consistency in flavour and presentation.
- Assist with portion control, plating, and maintaining food presentation standards.
- Maintain cleanliness and organisation of kitchen areas, equipment, and workstations.
- Assist with stock rotation, ingredient storage, and preparation planning.
- Follow food safety procedures, HACCP requirements, and workplace health and safety standards.
- Support chefs and kitchen staff during busy service periods.
Qualification and Experience Required
- Minimum Cert III in Commercial Cookery (relevant or higher)
- Minimum 1 year of relevant full-time experience as a Cook or similar role in a commercial kitchen.
- Experience preparing Indian cuisine or knowledge of Indian cooking techniques is preferred.
- Ability to prepare ingredients and follow established recipes and kitchen procedures.
- Ability to work efficiently in a fast-paced restaurant environment.
- Understanding of food safety, hygiene, and safe food handling practices.
- Relevant culinary training or qualifications will be highly regarded.
