Hardwicks is family owned company that has been operating successfully for over forty years. The business specialises in serving their customers beef, lamb and goat in carcase and carton form to ensure the best quality. Hardwicks services customers across metropolitan and regional Victoria, South Australia, Recent South Wales and Queensland. The company is recruiting an experienced and qualified Butcher to join their team in Kyneton VIC.

The successful candidate will need to undertake and possess:

- Prepare meat for wholesale and retail sale using a wide variety of processes
- Removing bones, trimming fat and cutting, mincing and grinding meat to shape and size as ordered
- Prepare crumbed cuts of meat, and marinating, seasoning and curing special cuts
- Select and prepare meat to produce smallgoods
- Operate machines to grind, mix,



mince and tenderise meat
- Make seasonings and pickles by mixing spices, salt and other ingredients
- Operate sausage filling machines, smoking chambers, and cooking kettles and vats

Skills and Abilities:

- Must have 3 years’ experience as a Butcher
- Certificate III in Meat Processing or related Qualification
- OH&S; awareness
- Food Handling and RSA certificates required

Salary range is $70,000 to $85,000pa commensurate with experience
