In a landmark building on leafy Russell Street, Gimlet is a cocktail bar and dining room that brings classic European charisma to the heart of Melbourne.
Gimlet is a space for all seasons and all reasons, from casual catch-ups at the bar to intimate booths and an elegant clothed dining stage above the city streets.
The menu embraces the confidence of Italian regional cooking, classic elements of French technique, flavours of Spain and hearty comfort dishes from the British Isles. One a la carte menu features throughout the venue and is supplemented with a late-night supper menu on Fridays and Saturdays.
The cocktail bar anchors the heart of the restaurant with clean,
classic cocktails and exciting new beverage offerings.
Written by Gourmet Traveller’s 2020 Sommelier of the Year, Leanne Altmann, our wine list was decades in the making and features a broad collection of wines from around the world. Be they classic regions, benchmark producers or new discoveries, the focus is on wines of place and provenance.

Trader House is a collective of restaurants, bars, and specialty retail stores by Melbourne-based chef, cookbook author and columnist Andrew McConnell and photographer Jo McGann. Operating in Melbourne are Gimlet, Apollo Inn, Cutler, Supernormal, Cumulus Inc., Marion, Builders Arms Hotel, Meatsmith Heritage Butcher and Morning Market. In 2024, Trader House opened Supernormal and Bar Miette in Brisbane. A new restaurant, Côte Basque, will open in Melbourne in the winter of 2026.
