Bar Manager – Left Bank Melbourne

Southbank VIC 3006 | Full-time | Leadership Role in a Flagship Venue

We’re looking for a seasoned and charismatic Bar Manager to lead the beverage program at Left Bank Melbourne – a high-energy restaurant and bar set in the heart of Southbank. As the face of our bar and the driving force behind our drinks strategy, you’ll work alongside our Director of Procurement and broader leadership team to deliver exceptional guest experiences, elevate beverage standards, and grow revenue.

What You’ll Be Responsible For

- Leading and mentoring a skilled bar team, including rosters, training, and performance

- Developing seasonal cocktail menus, product upgrades, and interactive drink experiences

- Managing all back-of-bar systems including stock control, wastage, supplier ordering, and Lightyear purchase orders

- Upholding RSA and liquor licensing compliance at all times

- Collaborating with our marketing and procurement teams on events, activations, and new product launches

- Resolving guest feedback with confidence and ensuring seamless front-of-house service

What You’ll Bring





- 3+ years in a Bar Manager or senior mixologist position in a high-volume setting

- Proven ability to lead a team, manage costs, and work to KPIs

- Advanced cocktail knowledge and a passion for creating elevated beverage moments

- Strong understanding of inventory systems, POS, and stock control (Lightyear experience a plus)

- Genuine hospitality mindset with a natural flair for engaging with guests

- Full work rights and RSA for VIC
