ESS provides multi-service capability to major companies and organisations operating in remote sites, gold mines and coal fields. We provide vital workplace support for people working in some of the most isolated terrains in the world, from oil rigs in the North Sea to gold mines in the Australian Outback.

We are currently seeking an experienced Head Chef to work out at our Hail Creek Village in Central Queensland catering for approximately 800-900 residents. This role reports directly to Site Management but would also need to be able to supervise up to approximately 15 or so employees at any given time.

- 9 days on, 5 days off roster. Working 10 hours per day
- FIFO from Brisbane
- Full time permanent employment, yearly salary $120,000 + super

The Position:

- Lead all kitchen operations for breakfast, crib & dinner service providing a buffet style service
- Manage & mentor a team of chefs, kitchen hands & dining room staff
- Oversee stock control, ordering & food safety compliance
- Ensure food is always prepared to a high standard
- Ensure OH&S; compliance, adhering to safe work practices & procedures.
- Ensure all catering controls are in place, & wastage is kept to a minimum.
- Maintain high standards of food hygiene, safety, infection control & cleanliness in accordance with Compass standards.
- Enhance workplace culture – display high levels of customer service, contribute ideas & be flexible to meet the needs of the business.

The Person:

- Cert III in Commercial Cookery - Minimum
- Must be reliable, strong & capable of leading a team




- Proven experience as a head chef or sous chef in mining or remote settings
- Excellent communication & leadership skills
- Experience within bulk catering/ cooking environments
- Excellent knowledge of all kitchen procedures & operations
- Experience in menu writing, stock control, budgets, rostering, staff mentoring, training & liaising with the client.
- Experience with hygienic work practices and appropriate HACCP guidelines
- A proactive leader who is professional, positive, supportive, & motivated with experience in training, and developing a team of hospitality professionals
