Novotel Melbourne South Wharf features golden 26 level tower with 347 accommodation rooms & suites, Mr. Carpano Dining and Bar and Allora Café. The hotel is complemented with direct access to the Melbourne Convention & Exhibition Centre (MCEC), the Southern Hemisphere's largest meeting space and adjacent to the DFO centre, with 180+ retail brands.
Job Description
We are looking for a full-time Sous Chef who thrives in a fast-paced, quality-driven kitchen and is passionate about creating memorable culinary experiences.



You will support the Head Chef in leading and inspiring the Kitchen team to deliver exceptional dining experiences.
Key Duties Include

- Assist the Head Chef in planning and directing food preparation and culinary activities.
- Drive day-to-day operations with a proactive, hands-on approach.
- Supervise and coordinate kitchen team to deliver high-quality dishes during service periods.
- Mentor, train, and support junior team members in developing their culinary skills.
- Ensure all dishes are prepared and presented to hotel standards by following established recipes and procedures.
- Maintaining a safe and hygienic work environment and understanding food safety standards and HACCP practices.
- Maximise productivity and controlling food and labour costs.
- Handle kitchen scheduling, stock ordering, and supplier communication in the Head Chef’s absence.
- Address and resolve any kitchen or food-related issues promptly.
- Stay updated with culinary trends and new techniques.

Qualifications





- Previous experience as a Junior Sous Chef or Senior Chef de Partie in a fast-paced hotel or restaurant environment.
- Experience with à la carte service and function catering.
- Proven leadership, communication, and team coordination skills.
- A hands-on, solutions-focused approach with a strong attention to detail.
- Genuine passion for food with a desire to learn and grow.
- Ability to mentor and motivate the team to achieve excellence.
- Excellent time management and organisational skills.
- Flexibility to work a variety of shifts, including mornings, evenings, weekends, and holiday periods.
